However, the problem is that with Canola oil the polyunsaturated element is processed and refined at extremely high temperatures. This processing makes that component in Canola oil harmful to the free radicals in your body.

Different from Canola oil, the same polyunsaturated fat in extra virgin olive is produced without the extreme heat or the harmful chemicals used in the production process for Canola oil. Also, the interaction between this fat and some of the other elements of extra virgin olive oil creates a beneficial impact by providing critical antioxidants for your body.

So the very same polyunsaturated fat component which is helpful in extra virgin olive oil is dangerous in Canola oil. The big difference is twofold – the production and processing component and the interaction with other ingredients in each product.
